When it has dried, cut the sides n slice each pieces from the centre vertically.
Sprinkle all d spices on the bhindi and mix well.
Now sprinkle the besan.
Make sure the spices and besan coat all the pieces uniformly.
Keep this marination for at least 30 mins. You may extend this time till 1 hour.
Heat oil in a pan and shallow fry the okra in 2 batches. The oil must be hot before you add bhindi into it otherwise the vegetable will become soggy and will not turn crispy.
Keep the bhindi on a crumpled kitchen napkin after frying to absorb extra oil.
You may also add a tablespoon of vinegar during the last minutes of frying or add juice of a lemon before serving. Chat masala or kala namak can also be sprinkled just before serving.
