Ingredients
- 200 gms Okra Bhindi
- 1 tsp Salt
- 1 tsp Turmeric powder
- 1/2 tsp Jeera powder
- 1 tsp chat masala
- 1 tsp Amchoor
- 1/2 tsp Red chilli powder
- 1 tsp Garam Masala
- 3 tbsp Besan
- 1 cup Oil for shallow frying

Instructions
- Wash the okra and let it dry on a kitchen towel.
- When it has dried, cut the sides n slice each pieces from the centre vertically.
- Sprinkle all d spices on the bhindi and mix well.
- Now sprinkle the besan.
- Make sure the spices and besan coat all the pieces uniformly.
- Keep this marination for at least 30 mins. You may extend this time till 1 hour.
- Heat oil in a pan and shallow fry the okra in 2 batches. The oil must be hot before you add bhindi into it otherwise the vegetable will become soggy and will not turn crispy.
- Keep the bhindi on a crumpled kitchen napkin after frying to absorb extra oil.
- You may also add a tablespoon of vinegar during the last minutes of frying or add juice of a lemon before serving. Chat masala or kala namak can also be sprinkled just before serving.
- Serve with hot chapatis and curd.
