Instructions
Rinse the brinjal in water.dry with a kitchen napkin.
Apply some oil all over and keep it for roasting on an open flame.
Roast the brinjal till its completely cooked and tender.with a knife check the brinjal becomes soft.
Remove the brinjal from the flame and bowl of water till it cools down.
Peel the skin from the roasted brinjal and mash the brinjal.
Take a wok.
Add onion ,green chilly ,matar together.
Add ghee and mix well.
Saute it for 5-8 min.
Add chopped tomatoes and mix it well .
Now add the salt , red chilly powder,degi mirch ,coriander powder .stir and mix well.
Saute it for 5-8 min so tomatoes becomes soft.
Add mash brinjal and mix well.
Stir and mix the brinjal very well with the onion -tomato masala mixture.
Saute it for 5 min cover it and heat it so that the ghee seperates out.
Add garam masala and garnish it with coriander.
serve it with chapati or prantha.
