Ingredients
- 1 glass rice basmati
- 1 cup cauliflower cut into small pieces
- 3 Onion chopped
- 2 Green Chillies chopped
- 1 cup peas mater
- 1/2 cup green beans, cut into small pieces
- 2-3 tomatoes chopped
- 1/2 cup carrots peel and cut into square pieces
- 2 tbsp ginger paste
- 2 tbsp garlic paste
- 1 green caradmom
- 1 bay leaf
- 1 tsp Salt
- 1/4 tsp Red chilli powder
- 1/4 tsp Coriander powder
- 1/2 tsp Kitchen king masala
- 1/4 tsp black pepper
- 1/2 glass milk
- 1/2 tsp Kasuri methi
- 1/4 cup Cashews
- 3 tbsp ghee
- 2 tbsp Oil
- 2 Onion sliced
- 2-3 clove
- 1 small Cinnamon
- 1/4 tsp saffron
- 3-4 tbsp milk
- Coriander leaves chopped
- 1 black cardamon motti elachi
- For gravy
- 5-6 Onion sliced
- 3-4 tomatoes chopped
- 5-6 garlic chopped
- 1 small Ginger
- 3 tbsp ghee
- 1 green caradmom
- 1 tsp Salt
- 1/4 tsp black pepper
- 2-3 Green Chillies
- 1/4 tsp Red chilli powder
- 1/4 tsp degi mirch
- 1/4 tsp cumin
- 1/4 tsp Coriander powder
- 1/2 tsp Chicken Masala
- 1 glass milk
- 1/4 tbsp soy sauce
- 1/4 tbsp kasuri metthi
- 1/4 tsp Garam Masala

Instructions
- First of all wash the rice properly.
- Take a pan, add suffecent water,rice,1/2 tsp salt,bay leaf,motti elachi, cinnamon,clove in it, and boiled the rice properly.
- Drain the extra water after boiled rice, and keep aside.
- Take a pan, add 2 tsp oil and fry the cashew nut ,until it becomes golden brown. also make onion golden brown by frying it.
- Then take a 3-4 tbsp hot milk, dip the saffron and keep aside.
- Take a wok.
- Add ghee,onion.garic, ginger, green chillies in it. satue it for 5-6 min,then add chopped tomatoes,and mix well.
- Add all spices,green cardamon , saute it for 5-6 min until the ghee separates out.
- Then add the all vegetables ,saute it for 7-8 min the add 1/2 glass of milk and mix well.
- Cover the lid and cook the vegetables until it becomes soft at low flame.
How to asamble briyani
- Take a glass dish,and grease the dish with little ghee.
- Arrange a layer of vegetables at the bottom.over that arrange half the boiled rice .sprinkle some chopped coriander,mint,arrange the remaining vegetables layer again then the layer of rice.
- Sprinkle some coriander,mint leaves.then pour saffron milk.
- Garnish with fried cashew nut or fried onions.
For gravy
- Take a wok.
- Add onion, ginger, garlic, green chillies, tomatoes all together in it.
- Add ghee and saute it for 7-8 min.
- Add all spices and saute it until the ghee separates out.
- Switch off the gas, let it cool down, and add some water,make a fine paste.
- Take a wok ,add the onion paste in it. if require you can add some ghee.
- Then add milk and mix properly.
- Boil it for 7-8 min so that gravy becomes thick. add garam masala.
