Ingredients
- 1 cup quinoa
- 1 Onions chopped
- 1 green bell peppers chopped
- 1 red bell pepper chopped
- 10 Button Mushrooms chopped
- 1/4 cup corn
- 2 cloves garlic chopped
- 2 tbsp raisins
- 1 lime for juice
- 2 sprigs Coriander leaves for garnish
- 1/4 tsp Salt to taste
- 1/2 tsp Turmeric powder to taste
- 1/2 tsp Red chilli powder to taste
- 1 tbsp Oil

Instructions
- wash quinoa few times and soak it in water
- In a pan drizzle some oil and sauté garlic. Once garlic is brown add onions
- Once onions are translucent add other veges and raisins .sauté for couple of minutes and add turmeric , salt and chilli powder.
- Add 2 cups of water and when it boils add drained quinoa . Cover it and let it simmer at low heat . Till all the water is absorbed . Fluff it with fork and squeeze lime on it .
- Garnish with fresh coriander and enjoy
