Ingredients
- For vada
- 6 Potatoes boiled and mashed
- 8-10 Cloves garlic
- 1 inch Ginger grated
- 1 tsp Mustard seeds
- 15 Curry Leaves
- 2 tbsp Coriander leaves
- 2 Green Chillies finely chopped
- 1/2 tsp Salt to taste
- 1 tsp turmeric
- 1 tbsp Lemon juice
- 3 cups Oil for frying
- For batter
- 1/2 cup Besan gram flour
- Pinch Astoefida
- 1/8 tsp Salt to taste
- Pinch baking soda
- For garlic coconut chutney
- 8/10 cloves garlic roasted
- 1/2 cup grated coconut roasted till brown
- 1/8 tsp Salt to taste
- 1 tsp Red chilli powder
- 1/2 cup boondi
- 1 tsp Coriander powder
- 1 tbsp peanuts roasted
- Coriander chutney
- 1 cup Coriander leaves
- 2 Green Chillies
- 1 tbsp tamarind paste
- 1/2 tsp Salt to taste
- 1 tbsp Lemon juice
- 1 tbsp Coconut grated

Instructions
- Take a wok add 1 tsp oil.add mustard seeds till it splutter,now add gingergarlic,green chillies paste and curry leaves.
- Now put this paste in mashed potatoes alongwith various spices and then add lemon juice and Coriander leaves.now make round balls of this material
- Make a batter of gram flour by adding salt ,astoefida, pinch of baking sodaand water.the batter should not b too thick nor too thin otherwise adjust water level accordingly.
- Now dip the balls prepared above intogram flour batter and deep fry it to make vadas.
For dry garlic chutney
- Dry roast garlic , coconut,groundnut in a pan.
- Now let them cool down
- Now put all the ingredients in the mixer and make chutney.
Coriander chutney
- Put coriander,green chilly,tamarind paste,lime juice,coconut in mixer and make chutney out of it.
Assembling
- Now cut pav from center apply coriander chutney on 1 side and sweet tamarind chutney on another side and also apply garlic coconut chutney.
- Keep vada in centre and fold it.
- Serve with chutney.
