In a pan warm the butter and add chopped garlic, saute for about 15seconds and add flour. Saute only till you get a nice aroma.
Add milk and stir, Lumps may form since we are using very little butter.
Blend the mixture in a mixer to get a smooth paste.
Transfer this mixture in a pan and cook with constant stirring till you get a thin film at the back of the ladle.
Add salt and pepper and remove it from flame.
Green spinach mixture
Blanch the spinach leaves in boiling water for two minutes. Remove and add in cold water, drain and chop the spinach.
In a pan saute garlic a bit. Since we are not using any butter so keep the flame very low and saute for a minute.
Add spinach and stir for 15 seconds. Remove from flame and add malai /cream, stir in salt and pepper.
If you want it spicy add some chopped green chilies.
For red mixture
In a pan saute the garlic for a minute. Since we are not using any butter keep the flame low.
Add chopped carrots, cook for a minute and add chopped tomatoes.
Cook till tomatoes get mushy.
Add salt, red chilly Italian spice mix, and tomato sauce.
Rice
Soak the rice for 20 minutes.
Boil it with water and salt.
When soft drain the water.
Since we drain the water, excess starch gets removed thereby reducing the carbohydrate content also.
Assembling
Take a rectangular glass dish and spread one-third rice in it.
Now spread one-third of the white sauce on it evenly.
Spread the green spinach mixture on the layer of rice evenly.
Again spread the next batch of rice on it, followed by white sauce similar to the first step.
Now spread the red mixture on it evenly.
Spread the remaining rice followed by the remaining white sauce.
Grate some cheese on top. This is optional.
Toss the mushrooms with a pinch of salt and garnish.
Sprinkle some Italian spice mix.
Bake it for 10 to 15 minutes at 180 degrees celsius.
