Instructions
Take a bowl and add all vegetables, 2 tbsp oil in it and mix well.
Sprinkle 2 tbsp dry maida and mix again.
Take a another bowl, add 3 tbsp maida, 6 tbsp cornflour, salt ,black pepper in it. (whenever maida has to be taken, cornflour should be double)
Add some chilled water and whisk well. Make a thick batter.
Coat mixed vegetables with batter and deep fry in hot oil till golden and crispy. Drain on absorbent paper.
Take a wok, add 2 tbsp oil in it.
Add chopped garlic, saute it for 2-3 min until it becomes light golden. Then add chopped green chillies in it.
Add red chilli paste, tomato sauce ,salt, black pepper, chilli flakes in it and mix properly.
Take 1 cup of water and add 1.5 tbsp cornflour in it and mix well.
Add cornflour mixture in the garlic masala and mix well.
Then add soya sauce and stir for few seconds.
Add fried vegetables and toss to mix. Then add spring onion with greens and mix well.
Garnish with coriander leaves and serve immediately.
