Ingredients
- Ingredients for Ragda
- 2 cups White Channa chickpeas
- 1/4 tsp Salt to taste
- 1 tsp Turmeric powder
- 1 pinch Asafoetida hing
- Patties
- 4 Potatoes boiled and peeled
- 2 tablespoons Corn flour
- 1/4 tsp Salt to taste
- 2 tablespoons Oil
- Serving
- 1 cup sev
- 1 cup Tomato finely chopped
- 1 cup Onion finely chopped
- 1/4 cup green chutney coriander chutney
- 1/2 cup tamarind chutney Khajur Imli Chutney or any sweet chutney of your choice.
- 1/2 cup Coriander leaves finely chopped

Instructions
Ragda :
- Soak chanas overnight. Next morning drain them and transfer to a pressure cooker. Add salt, turmeric, red chilli powder and a pinch of hing and 2.5 cups of water.
- Pressure cook for 10-15 minutes.
- Add juice of one lemon.( optional)
Patties:
- Boil potatoes and mash them while they are still hot.
- Add salt, red chilli powder and cornflour.
- Make round patties and shallow fry them.
To Assemble:
- Keep all the ingredients ready before frying patties. Ragda should be hot while serving.
- Place 2 patties on a plate/bowl.
- Top it up with generous amount of ragda.
- Add finely chopped onions and tomatoes.
- Sprinkle both the chutneys and chaat masala.
- Cover with sev and serve immediately.
