Ingredients
- 3-4 Big Potatoes Boiled, peeled and mashed
- 1 Big carrots Grated
- 1 Small Capsicum Chopped
- 1 Small piece Paneer cottage cheese
- 1 Piece Green Chillies
- 1 Tbsp Coriander leaves Washed and chopped
- 1 Tsp Carrom seeds
- 1 Tsp Red chilli powder
- 1 Tsp Amchur Mango powder
- 1 Tsp Kasuri methi
- 1 Tsp cumin powder
- 1 Tsp Salt
- 1 Tsp Oil
- 1 Tbsp mayonnaise
- Tbsp green chutney mint
- 1 Small Cube Butter Optional (can use ghee or oil as well)
- 8-10 Slices Brown Bread

Instructions
- First of all need to have the filling ready.
- In a pan, add little oil, add chopped onions, grated carrot and chopped capsicum and sauté it well for few minutes.
- Make the veggies cool and keep it aside.
- In a bowl, add mashed potatoes, veggies (after getting it to normal temperature), salt, red chilly powder, Mango powder, cumin seeds powder, carrom seeds, chopped green chillies, grated cottage cheese and coriander leaves. Mix it well.
- Add mayonnaise and green chutney in the filling (can be used as a spread on bread slices as well)
- Mix everything well and have it ready as seen in the pic
- Take brown bread and spread some mayonnaise on one side and other side with pudhina (mint) chutney stuff in between with the filling. For the open sandwich apply the mayonnaise and mint chutney both on one slice and than spread the filling also on it.
- Now add little butter in the stack and place the sandwich over it
- Cook both the sides till they turn brown, even the open sandwich.
- Cut into 2 halves and garnish with grated carrot and cottage cheese, open sandwich can be served by cutting into 2 halves or just like that.
- Ready to serve with ketchup.
