Ingredients
- 1 Bunch Coriander leaves
- 1 Tbsp lemon zest
- 6 Cups Water
- 1 Bowl Mix vegetables mushrooms, cauliflower, carrots, beans, peas, cabbage, corns
- 1/4 tsp Salt to taste
- 1/4 tsp black pepper to taste
- 1 Green Chilli
- 1 Lemon

- Wash the coriander leaves and chop them roughly.add the lemon zest(skin of lemon) and green chilli( slit it) in a pan and add 5 cups water.let this boil for 15 minutes on low flame.this will for making our vegetable stock.discard the coriander leaves and zest and preserve the water for further use.discard the matter shown in pic
- Boiling the lemon zest will not taste bitter but make sure that skin is peeled in such a way that the inner white portion does not come along as it will make the soup bitter.
- Then cut the vegetables finely,I added mushrooms,corns,bit of cauliflower,bit of cabbage,2 carrots,half cup peas ,all of them have to chopped finely
- Now in a pan add 2 cups of water and and veggies to it.let this boil for 5 minutes,
- Add coriander lemon stock.let his boil for 5 minutes on low flame,
- Add salt and pepper to taste.switch off the flame.
- Just before serving squeeze in lemon juice and garnish with coriander leaves,now soup is ready,enjoy this healthy and easy to make soup
