Ingredients
- 2 lb small potatoes Red or colored fingerling potatoes
- 1/4 cup olive oil
- 1 tsp Salt Adjust according to taste
- 1 tbsp crushed black pepper
- 6 cloves garlic Crushed
- 1 tbsp Coriander powder Or any flavoring of your choice
- 1 tbsp minced fresh parsley Or fresh cilantro

Instructions
- Preheat the oven to 400 degrees F.
- Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and crushed garlic.
- Toss until the potatoes are well coated.
- Transfer the potatoes to a sheet pan and spread out into one layer.
- Roast in the oven for 20 mins. Take out of oven and flip with a spatula. Put back in the oven for roasting for another 15 mins.
- Take out of oven and flip with a spatula. Put back in the oven for roasting for another 10 - 25 mins or until browned and crisp.
- Remove the potatoes from the oven, toss with cilantro or parsley, season to taste, and serve hot.
