Instructions
- Cut broccoli into small florets.
- Bring water to a boil in a pan and add broccoli florets to it. Turn off the flame . Let the broccoli stay this way for about a minute and thereafter drain it. This is done to ensure ....
- Heat butter in the pan. Add garlic and chopped onion. Sauté till soft.
- Now add flour and sauté for another minute.
- Add drained broccoli and mix well.
- Add water and cook covered, on low flame till the broccoli is soft, about 6/7 minutes.
- Turn off the flame and let it cool down a bit.
- Now using a hand blender, blend the mixture into a smooth soup.
- Now turn on the flame and add milk that has been heated just before adding it to the soup. Boiling of milk is not required.
- Add salt and oregano.
- Soup is ready. You may add grated nutmeg or other herbs to enhance the flavor. The quantity of butter may be increased as per your preference. The thickness of soup can also be varied using more or less water.
