Ingredients
- 300 Gram Aubergine/Eggplant Brinjal, cut into thin long pieces
- 2 Big Onions cut into long pieces
- 2 Big tomatoes cut into chopped
- 2 Tsp Oil
- 1 Tsp Mustard seeds
- 1 Tsp Curry Leaves
- 1 Tsp Turmeric powder
- 1 Tsp Red chilli powder
- 1 Tsp Sambar Powder
- 1/2 Tsp Salt
- 1 Tsp Coriander leaves

Instructions
- In a pan, add oil and heat it well.
- Than add curry leaves and mustard seeds.
- Allow it to splutter well, than add onions.
- Than add chopped tomatoes and sauté well again.
- Sauté it well, till it becomes soft.
- After few minutes add cut brinjal and sauté well again.
- After few minutes add salt, turmeric powder, red chilly powder and sambar powder.
- Sauté well again till it is nicely mixed.
- After few minutes add water to it so that brinjal is cooked well.(add when brinjal is not cooked fully but mixed well)
- Ensure it is not mashed.
- Keep it on stove till water is absorbed well.
- Add coriander leaves to garnish.
- Ready to serve.

can add garam masala if required.
